Ingredients

- drained sauerkraut
- 500 mL

- radishes, sliced into matchsticks
- 1/4 cup
- finely chopped cilantro
- 60 mL
- 1 tbsp
- grated fresh ginger
- 15 mL
- 2 tsp
- grated or minced garlic
- 10 mL
- 2 tsp
- sugar
- 10 mL
- 1 tsp
- paprika
- 5 mL
- 1 tsp
- chili garlic sauce (or more to taste)
- 5 mL
- 1 tsp
- fish sauce
- 5 mL
Directions
Step 1
In large bowl, mix together sauerkraut, radishes, cilantro, ginger, garlic, sugar, paprika, chili garlic sauce and fish sauce.
Step 2
Transfer mixture to glass jar with tight-fitting lid. Keep refrigerated. Use within 2 weeks.
Tips
The longer you leave this kimchi-style sauerkraut in the fridge, the more intense the flavour becomes.
