Ingredients

- peeled and diced white potatoes
- 1 L
- 3 cups
- small cauliflower florets
- 750 mL
- 4 oz
- herbed goat cheese
- 125 g
- 1 tsp
- salt, or to taste
- 5 mL
- 1/4 tsp
- pepper
- 1 mL
Directions
Step 1
In large saucepan, cover potatoes with cold salted water. Bring to a boil; simmer 15 to 20 min., or until tender. Meanwhile, bring another saucepan of salted water to boil for the cauliflower. Add cauliflower; simmer 10 min. or until tender.
Step 2
Drain both the potatoes and cauliflower, keeping them in their saucepans.
Step 3
Roughly mash the potato. Add the cauliflower into the saucepan of potato. Mash until the potato-cauliflower mixture is to preferred texture.
Step 4
Stir in cheese, salt and pepper. Serve mash as is or transfer to a 13 X 9-in. (3-L) baking dish. Bake in preheated 180°C (350°F) oven for about 20 min., until lightly golden.
