Ingredients

- Six Bean Blend, drained and rinsed
- 540 mL
- 1 can
- flaked albacore white tuna in water
- 170 mL
- 1 cup
- canned artichoke hearts, drained, rinsed, quartered
- 250 mL
- 1/3 cup
- diced red onion
- 75 mL
- 2 tbsp
- capers, drained and rinsed
- 30 mL
- 2 tbsp
- olive oil
- 30 mL

- lemon juiced
- 1/2 tsp
- Italian seasoning
- 2 mL
- 1/4 tsp
- salt
- 1 mL
- 2 cups
- lightly packed spinach
- 500 mL
Directions
Step 1
In a large bowl, add beans, tuna, artichokes, red onion and capers and stir to break up tuna.
Step 2
In a small bowl, whisk together oil, 2 tbsp (30 mL) lemon juice, Italian seasoning and salt. Pour over tuna mixture. Add spinach and gently stir to combine. Add more lemon juice, if desired.
Tips
Capers give a slight mustardy and peppery flavour.
