Ingredients

- turnips, peeled and chopped
- 1.5 kg
- 1/2 cup
- buttermilk
- 125 mL
- 1/2 cup
- plain 2% Greek yogourt
- 125 mL
- 2 tbsp
- white wine vinegar
- 30 mL
- 1/4 cup
- finely chopped fresh parsley
- 60 mL
- 2 tbsp
- finely chopped fresh chives
- 30 mL
Directions
Step 1
Heat oil in large skillet on medium heat. Cook onions with salt and pepper, stirring often, approx. 30 min. or until golden brown. Set aside.
Step 2
Meanwhile, in large saucepan of boiling salted water, cook turnips approx. 25 min., or until tender. Drain.
Step 3
Mash turnips with buttermilk, yogourt and vinegar. Stir in parsley, chives and reserved onions.
Tips
To make up to 2 days ahead, spread mash in greased baking dish, cover with foil and refrigerate overnight. Reheat in 375 F (190 C) for approx. 15 min., garnish with additional chives to serve.
